Dirty Fries with Burnt Ends and Chipotle Mayo
This dish is a heavenly combination of skinny fries drenched in smoked meat juices, with tender chunks of burnt ends and melted cheese. Top it off with some spring onions and chipotle mayonnaise…..awesome.

1kg BF022 Smoked Burnt Ends
1.25kg CHO15 Shoestring Fries
400g CHE213 Sliced Monterey Jack
350g SCE128 Chipotle Mayo
1 x Bunch Spring Onions
Heat the burnt ends with the cook-out juices to 72˚C for 2 minutes. Cook the shoestring fries and place in a heat proof dish. Drizzle the meat juices over and add the chunks of burnt ends. Layer on 2 slices of Jack cheese and melt under the grill. Scatter spring onions over and add the chipotle mayonnaise.
