Smoked Pork Belly Bites with Apple Sauce & Chilli
Our St. Louis Pork Rib Joint makes an amazing bar snack or small starter, cut into small cubes and served with some apple sauce. The lovely smoky flavour of this tender pork just melts in your mouth.
Whilst the pork is still cold, run a knife down the underside of the joint to remove the ribs. Portion the meat into 1 inch cubes and set aside until required. Re-heat the pork to 72˚C for 2 minutes and serve with a spoon of apple sauce and a few fresh chillies.
