In Brodo…. simply meaning ‘In Broth’ is a traditional Italian way of eating Tortellini and Cappelletti. Here at Serious Food we are celebrating this pasta tradition from the Emilia-Romagna, an area of Italy renowned for its wonderful gastronomy. We have teamed up with our fantastic Italian pasta producer to bring you a theatre cooking concept that is simple to deliver, exceptionally tasty and has all the traditions of the best Nonna’s kitchen.
Your customers choose from a variety of filled pasta – Tortellini Bolognese, Cappelletti Romagnoli or Passatelli, which are then combined with a steaming hot broth (chicken, beef and vegetable) and finished with their favourite garnishes and toppings; everything from steamed kale, roasted broccoli and rocket to pan fried mushrooms and roasted aubergines.
