Passatelli is a really different kind of pasta originating from the Emilia Romagna. It is made from Parmigiano Reggiano, eggs, breadcrumbs and a small amount of wheat flour.
Passatelli is usually eaten “in brodo” but can be eaten with a meat or fish ragu. It is a classic example of Italian peasant cooking where creativity and thrift comes together to create something wonderful.
